In the Landmark Basement, around the corner from the Central MTR, sits a doctor’s office of a different sort. In this case, it’s Dr. Fern’s, an ode to an eccentric physician who believes that plant botanicals heal stress. He’s a fictional character, of course, but the 250 gin varieties on offer in the premises are very much real.
Behind the bar, Head Bartender Gerry Olino holds court. The drinks veteran has two decades in the business, including a stint at the prestigious Lobster Bar in Admiralty. While he can make more than 200 drinks, what’s on offer at Dr. Fern’s are specially made gin drinks. That’s all that’s on the menu…and that’s all that you’re going to get.
They’re made with care. The ingredients are fresh. The taste is thirst quenching. “Hong Kong is ready for the gin craze,” he says with a smile. With that, he prepares what he calls a “Blind Tiger Gin & Tonic”, made with Blind Tiger Gin direct from Belgium.
BLIND TIGER GIN & TONIC
Ingredients
Frozen Blind Tiger Gin
Long 4 inch square ice cubes
Grated lime
One cut citrus skin
One rosemary stick
1 bottle of Fever Tree Tonic
1 Tall Glass
TO MAKE
Pour 1 ½ ounces of Blind Tiger Gin into the glass
Pour 1 bottle of Fever Tree Tonic over the gin
Place the grated lime on top
Put the citrus skin on the edge of the glass
Place one rosemary stick inside the glass
Place the ice cubes in last to prevent foaming
Voila…a drink you’ll keep returning to when the sun melts the sidewalk outside.
